I have been thinking, about which came first.
The chicken or the egg?
Most importantly, why does this matter to me?
Well, it doesn’t.
Back to eggs.
Do you know that there are many ways to eat eggs?
There are sunny side up eggs, eggs cooked over easy, there are scrambled eggs, there are poached eggs, there are eggs on toast and eggs Benedict, and eggs Florentine.
I am sure there are many other ways to have eggs as well.
You can use just the whites of the eggs in things like souffles, waffles and merengue.
Egg whites are low in calories and high in protein.
So why wouldn’t I want to eat eggs, especially egg whites?
Let me tell you about the morning that I ate a whole egg.
I was so hungry that morning, I ate an entire egg for breakfast,
you know it is the most important meal of the day.
Then it happened.
The reaction.
It was nothing really, but you know parents.
My face started to swell up and I got a rash over my entire body and even my ears were swollen.
It was just a little reaction.
It was nothing that the staff at the hospital couldn’t handle.
Actually, it was serious, but don’t tell my parents.
I am a kid, so I don’t worry as much as they do, but I’m not supposed to either.
It turns out that my reaction got me an early morning field trip, to an allergy specialist.
It was a day of testing, of poking and of feeding.
It was a long day so I am glad that my Mom packed a lunch and we spent some quality family time together.

It turns out that I am allergic to egg whites.
It isn’t deadly, I just can’t eat them on their own,
for now.
I can have them in baking and in cooking but just not on their own.
They say that I will grow out of this, and I am glad of that.
It is all part of growing up.
I know lots of people that are allergic to other things, so I don’t feel bad.

I am thankful that I didn’t have an ostrich egg for breakfast that morning.
